Vanilla Coconut Chia Pudding

1 can coconut milk
3 Tbsp chia seeds
1/2 cup finely shredded coconut
3/4 cup almond milk
1 tsp. vanilla powder
2-3 Tbsp maple syrup

Blend all the ingredients lightly in the blender to mix well. Pour into a large mason jar and put in the fridge for a couple hours or overnight. Eat right out of the jar or serve in bowls with toasted coconut as a topping. Yummy!
