McCorry Family Rum AmazeBalls!

12 oz. semi-sweet chocolate chips
1/2 cup almond paste
1 cup sour cream
pinch of salt
8 cups finely chopped vanilla wafers (3 boxes)
3 cups icing sugar
1 cup melted butter
2/3 cup cocoa
1 1/2 cups rum
2 cups pecans, finely chopped
chocolate raspings to roll balls in

  • Combine melted chocolate chips with sour cream, almond paste, and salt, cream together.
  • Mix other ingredients together in a bowl. Add to first mixture.
  • Cover and put in fridge for 24 hours before forming into balls.
  • Roll by hand into small balls and roll in raspings.
